Parsley shrimp is a super yummy, super easy, super healthy gluten free dinner. All that and it feels a bit sophisticated as well. Wine with dinner is a must when making this. And possibly wine when cooking as well.

The recipe is from Kerry at French Revolution. Fun blog with French inspired recipes. It is not gluten free in particular but some recipes are, others are able to be modified and certainly good for inspiration.

I have adjusted the ingredient amounts slightly to suit my tastes – more jalapeno.

In the food processor place 4 cloves of garlic, one bunch of parsley (tough stems removed), 3-4 scallions and two jalapenos (seeds removed). If you prefer less spice, use 1/2 to 1 jalapeno instead. Add some black pepper, a pinch of salt and blitz together. Add 1/3 cup of olive oil and combine.

Place a pound of large shrimp in a heavy bottom pot and top with the green sauce.

To the shrimp add 1/4 cup white wine and a tablespoon of water. Bake this in the oven, uncovered, at 500 degrees for 8 minutes. Shrimp will be pink and opaque when they are done.

An easy side dish to this is roasted cauliflower. It goes right in the oven with the shrimp at 500 degrees for 15-20 minutes until it is good and browned.

Plate them together and the parsley sauce will end up on the cauliflower. Delicious!
